This sourdough cinnamon roll focaccia bread is the best dessert or breakfast or brunch, and it starts with unfed starter straight from the fridge and can be baked the same day. Enjoy!
Combine the sourdough starter, water, honey, and salt in a bowl.
Add the flour and mix thoroughly. (Add an extra 1/4 cup at a time, if needed, until a soft dough forms.)
Add dough to a buttered baking pan. Spread dough out to edges (let dough rest briefly to relax, if needed)
Ferment at room temperature or in warm oven until it is bubbly/puffy and has increased by about half the volume (at least 7 hours).
Cinnamon Roll Topping
In a small saucepan, melt butter, brown sugar and cinnamon over medium heat.
Add vanilla. Let cool slightly.
Pour the mixture on top of risen dough, and dimple it in with your fingers to distribute throughout the dough.
Bake
Bake at 425 degrees for 20 to 25 minutes or until it is bubbly and golden brown.
Cream Cheese Glaze
While baking, mix softened cream cheese, powdered, sugar, vanilla and 1 tablespoon of milk at a time until you reach your desired glaze consistency. (Omit cream cheese, if you'd rather have a simpler glaze.)
After the pan of focaccia cools slightly, drizzle the glaze over the entire pan, and serve.
