This dip is so easy to throw together for lunch, or breakfast (as my daughter requested the other day)! It’s full of healthy greens and fats to help you absorb their nutrients.
You can easily thaw a whole bag of spinach in a saucepan on the stove, then stir the rest of the ingredients in, and have it ready in a short amount of time.
I serve it in the small saucepan I mix it in, pop it in the fridge afterwards with the lid on, and then set it straight back on the stove to serve warm for leftovers the next day!
